Blueberry Chia Jam Compote

Ingredients

  • 200g frozen blueberries
  • 100ml water
  • 3 tbsps of chia seeds
  • Juice of 1/2 a lemon
  • 2 tbsps of Stevia (or you could use agave or honey)

Equipment

  • Measuring jug
  • Saucepan

Method

  • Place the blueberries and the water in the saucepan and simmer on a low heat for about 10 minutes. The blueberries will start to reduce and loose their shape.
  • At this point add the lemon, sweetener and chia seeds. Keep simmering the mixture for another 5 minutes or so. The chia seeds will slowly absorb the rest of the liquid making the blueberries turn into a jam consistency.
  • And voila! You could make other variations of this using raspberries, strawberries and blackberries for example. The jam also works great with yogurt, to make your own healthy muller corner! I like mine sprinkled with bee pollen.
